Buy the first roast that are regularly covered in meat. In other words, do not buy a plate that is fat at one end and fleshy on the other. Avoid roastss with exposed bones!
Allow a pound of ribs per guest. This is a generous help, but for more impressive appetites, make it two!
In the preparation of meat, be sure to remove the membrane on the bottom of the ribs with a sharp knife. If you do not block the contribution of flavor.
Always marinate your ribs in the refrigerator, not at room temperature.
Do not even think to boil the ribs! Above all, boil the meat makes it lose its flavor. If you only have to pre-cook the ribs before slapping them on the shelf, try steaming instead of slabs that will help lock the flavor in.
Before placing your sixth ribs on the grill for grilling or smoking, be sure to coat metal with a good dose of oil.
Grilling requires constant attention! As soon as you go to your home, stay close and keep an eye on it. Watch the cooking temperature and avoid going over 250 degrees Fahrenheit - the best ribs are slowly cooked by indirect heat for about five hours.
Place this fork! Always use tongs to handle the meat when it is on the grid. Why pierce the meat and let the flavor seep if you do not have to?
If you want to water during cooking stay away from anything with sugar. Your best bet is to use vinegar and / or water-based products.
Only put on the barbecue sauce during the last 20-30 minutes of cooking. Any faster than the heat of the sauce will caramelize and burn your flesh.
Cool ribs for 10-15 minutes before serving up. This is just a courtesy - you do not want to burn the mouths of your guests with hot sauce! You may lose some friends.
